Materials Needed:

  • Sauce Pan
  • Mixing Spoon
  • Mixing Bowl
  • Strainer
  • Plastic Wrap

INGREDIENTS

  • 1 4oz or 8oz goat cheese roll (roll will get larger after mixed)
  • 1 bag of frozen cranberries
  • Sugar (can sub Truvia for a lower carb option)
  • Pistachios (pre-shelled is easiest)
  • Crackers or pretzels

DIRECTIONS

  • Make cranberry sauce per recipe on bag (best if made the day before)
  • Take goat cheese roll out to soften and place into mixing bowl
  • Strain ½ cup cranberry sauce and mush to make jelly consistency
  • Add strained cranberries to goat cheese and fold together
  • Lay out a large piece of plastic wrap
  • Place goat cheese mixture near the end of the wrap and begin to roll cheese mixture back into a log shape
  • Refrigerate until ready to eat
  • Top with chopped pistachios when ready to serve
