
Materials Needed:
- Sauce Pan
- Mixing Spoon
- Mixing Bowl
- Strainer
- Plastic Wrap
INGREDIENTS
- 1 4oz or 8oz goat cheese roll (roll will get larger after mixed)
- 1 bag of frozen cranberries
- Sugar (can sub Truvia for a lower carb option)
- Pistachios (pre-shelled is easiest)
- Crackers or pretzels
DIRECTIONS
- Make cranberry sauce per recipe on bag (best if made the day before)
- Take goat cheese roll out to soften and place into mixing bowl
- Strain ½ cup cranberry sauce and mush to make jelly consistency
- Add strained cranberries to goat cheese and fold together
- Lay out a large piece of plastic wrap
- Place goat cheese mixture near the end of the wrap and begin to roll cheese mixture back into a log shape
- Refrigerate until ready to eat
- Top with chopped pistachios when ready to serve
