
INGREDIENTS
- 2 Tbsp vegetable oil
- 1 onion large, chopped
- 1 lb. beef top sirloin cut into 1-inch cubes
- 6 cloves garlic minced
- 1.5 Tbsp coriander seed ground
- 2 tsp cumin ground
- 1 tsp white pepper ground
- 2 cups water
- 2 tomatoes large, blended or 1.5 cups tomato sauce
- 1 Tbsp tomato paste
- 1 green chili peppers seeded and minced
- 1 Tbsp ginger fresh, crushed or minced (1-inch piece)
- 1 tsp salt
- 2 cups okra fresh, cut into 1-inch pieces (or one 10-oz. package frozen okra, thawed) or 10 ounces okra frozen, thawed
DIRECTIONS
- Heat oil in a large pot over high heat. Add onion and cook until soft.
- Add beef, garlic, coriander, cumin, and white pepper. Stir and cook until meat is brown, about 5 minutes.
- Add water, tomatoes, tomato paste, chili, ginger, and salt. Stir and bring to a boil. Reduce heat to low. Cover partly and simmer until meat is tender, 30 to 40 minutes.
- Stir in okra. Simmer 10 minutes.
